What does a workout app do that a spreadsheet does not?
It carries your previous numbers forward automatically, calculates estimated 1RM and volume as you log, and flags personal records without a formula. A spreadsheet can do all of that only if you maintain the formulas yourself.
What does a notebook do better?

Can I import my old spreadsheet history?
There is no spreadsheet import in the current version. The practical approach is to rebuild your routine as a template, which takes a few minutes, and let the new history accumulate from there.
Do I have to give up my own structure?
No. Templates take any split you already run, and custom exercises cover anything the library does not have.
